A light fruity mousse to finish a hearty meal!
12 fresh medium sized red plums ¼ cup caster sugar 4 teaspoons gelatine 4 tablespoons boiling water 4 cups Tatua™Dairy Whip® Lite Whipped Cream

Method:
Turn oven onto grill at 220°C. Cut plums in half around the stone and twist into halves. - Using a small paring knife carefully edge out the stones. Bunch the halves together cut side up on your chopping board and sprinkle heavily with sugar.
- Transfer plums to a baking tray lined with baking paper. Grill for 5-6 minutes until the sugar bubbles and caramelises.
- While plums are grilling, mix the gelatine and boiling water together and set aside.
- When plums have cooled, tip off any excess liquid and blend until pureed. Add gelatine and pulse the pureed mixture until combined. Pass through a fine mesh sieve to remove skins.
- Fold in Tatua™Dairy Whip® Lite Whipped Cream then distribute between 6 ramekins or glasses.
- Chill for at least 3 hours before serving. Top with a little extra Tatua™Dairy Whip® Lite Whipped Cream immediately prior to serving.
- Serves 6.
