The tropical fruits used in this recipe bring a little summer sunshine to the table. Of course the tropical fruit can be substituted for fruits more readily available.
6 egg whites 1 ½ cups caster sugar 250g Tatua™Dairy Whip® Lite Whipped Cream 1 mango, thinly sliced 1 banana, thinly sliced 2 passionfruit

Method:
Place egg whites in a large bowl and beat with an electric mixer on high speed until soft peaks form.- Gradually add sugar, one tablespoon at a time, beating well between each addition and until the sugar is dissolved. This will take approximately 10 minutes.
- Spoon mixture onto a foil-lined baking tray and bake at 120°C for 1 to1½ hours or until dry and crisp. Allow to cool.
- Top pavlova with Tatua™Dairy Whip® Lite Whipped Cream, mango, banana and passionfruit and serve immediately. Ensure that it is not left to sit.
